DARK CHOCOLATE - It's Official - It's good to health

The cocoa fibers are important for fighting diseases such as cancer of the colon, says a new research.

Many studies have been published on the benefits of dark chocolate, but the reasons for this idea were to be discovered ... until today.

It was at the annual meeting of the American Chemical Society in Dallas, John Finley, professor and researcher at the State University of Louisiana, has said knowing "that some of the cocoa components are very good for health." For the study, the researchers resorted to a digestive system model similar to the human, to see what happened to the fibers when they reached the colon. Observing this process, both concluded that these, after fermenting, turned into short-chain fatty acids, "the favorite food of the colon cells" explained Finley.

"There are two types of bacteria in the gut, the good and the bad. The good bacteria such as Bifidobacterium and lactic acid bacteria, love chocolate. When you eat chocolate black, they grow and ferment, producing anti-inflammatory components, "Moore said at the meeting, explaining the results of the work with the help of a team of experts.

This is the first study on the effects of dark chocolate in various kinds of stomach bacteria. Finley and Moore concluded that the combination of cocoa fiber with undigested food ingredients may contribute to the health, creating greater resistance to colon cancer and inflammatory bowel disease.

O que explicaria, então, esse benefício “extra” que o consumo de chocolate negro parecia trazer? Finley e Maria Moore, aluna e investigadora deste projecto, decidiram procurar uma explicação, tentando perceber de que forma as fibras não digeríveis do cacau, que vão directamente para o cólon, têm impacto no organismo.

Para o estudo, os investigadores recorreram a um modelo de sistema digestivo similar ao do humano, para ver o que acontecia às fibras quando estas chegavam ao cólon. Ao observarem o processo, ambos concluíram que estas, depois de fermentarem, se transformavam em ácidos gordos de cadeia curta, “a comida preferida das células do cólon”, explicou Finley.

“Existem dois tipos de bactérias no intestino, as boas e as más. As bactérias boas, tais como Bifidobacterium e a bactéria do ácido láctico, adoram chocolate. Quando comes chocolate preto, elas crescem e fermentam, produzindo componentes anti-inflamatórias”, disse Moore no encontro, explicando os resultados do trabalho desenvolvido com a ajuda de uma equipa de especialistas.

Este é o primeiro estudo sobre os efeitos do chocolate negro em vários tipos de bactérias estomacais. Finley e Moore concluiram que a combinação do teor de fibra do cacau com os ingredientes não digeridos dos alimentos pode contribuir para a saúde, criando maior resistência ao cancro do cólon e à doença inflamatória do intestino.
